Recipes:
Creamy Chicken:
10 frozen, skinless chicken tenderloins
1 can cream of chicken
1 can cream of mushroom
1 cup sour cream
1/2 cup water
Salt, pepper, paprika
**Spray 9X13 dish with Pam. Line bottom with frozen chicken-sprinkle chicken with salt, pepper and paprika. Combine other ingredients in a bowl and pour on top of the chicken. Bake at 350 degrees for 50 minutes or until chicken is done.
The "gravy" from this is delicious on top of the rice.
Rice: I make my rice like this:
1 cup rice
2.25 cups water
2 chicken bouilion cubes (spelling?)
**Combine in pan and bring to a boil, stir so the buillion cubes dissolve, then cover and steam for 15-20 minutes. Before I put the lid on, I like to add a bay leaf to the top. It adds just a touch of unique flavor.
Green Beans:
Tonight I added some brown sugar and butter to canned green beans, brought to a boil, then simmered for 10-15 minutes. They were SO yummy.

Kid Friendly Recipe!
We went to my friend Valeria's house for a playdate. She totally spoiled us with a yummy lunch of homemade hummus and carrots and these 2 dishes. The kids LOVED the meatballs, especially. I will definitely be making both these dishes. SO GOOD.
Hash Brown Casserole
½ package of hash brown
1 can of cream of chicken
1 ½ cups of mix cheese
Salt, pepper and your favorite seasoning
Coat the Pyrex and mix everything together, leaving a 1/2 cup of cheese to put on top. Bake at 350 for 50-60 minutes.
**Mini Meatballs
¼ cup of plain breadcrumbs
2 eggs (lightly beaten)
1 tbsp milk
1 tbsp ketchup
1 tbsp mustard
¾ mix cheese or parmesan
Salt, pepper and your favorite seasoning
¼ cup olive oil
1 lb ground turkey or chicken
In a bowl, stir together all the ingredients and then add the meat, mix well and shape the meatballs. (50 mini or 30 medium size). Time saving tip-use small measuring spoon or mini-ice cream scooper to form balls.
Bake at 350 for 50 min or until golden brown.
Fun idea: make "meatball lolli-pops" by putting the meatballs on shish-k-bob sticks. Have favorite dipping sauces.
