My sweet friend, Heather, has provided 2 meals for me and the boys this week. The first was the chicken chili that I cook, then tonight we ate this casserole. Me and the boys DEVOURED it! J and T kept saying "mmm-this is yummy!"
I had frozen the casserole, so I actually cooked it for about 45 minutes. But unfrozen, 30 minutes will be plenty.
Noodle & Cheese Casserole
Ingredients:
· 1&1/2 Pounds of Hamburger Meat
· Desired amount of chopped onions
· 1 Can of Cream of Mushroom Soup
· 1 Small block of Velveeta Cheese
· 1 Tsp. of Butter or Margarine
· 1 Can of milk (fill the Cream of Mushroom can with milk)
· 10 oz. or 12 oz. Package of Elbow Noodles
· 1 Bag of shredded Sharp Cheddar Cheese
Directions:
· Brown the meat and onion in a large skillet - Set aside in strainer
· Cook noodles while/after the meat is browning - Set aside
· In sauce pan mix Velveeta Cheese, Cream of Mushroom Soup, milk and butter
· Once the Velveeta Cheese is melted add the meat and noodles - Mix well
· Put it in a cake pan and sprinkle Sharp Cheddar Cheese on topBake at 350° for about 30 minutes

Frittata
Prep time: 15 minutes>
1/2 lb lean ground beef
1 TBL butter
2 cups sliced mushrooms
1/2 onion, chopped (app 1 cup)
2 Tsp Worcestershire Sauce

1/2 cup shredded Parmesan Cheese>

Jalapeno Rice
Got this from a recipe exchange, havent tried it yet
Jalapeno Rice
Saute in 1/2 stick butter:
1 medium onion
2 tbs chopped jalapeno
Boil until rice is soft:
1 can chicken broth
1 cup regular rice
Combine w/onion and rice:
1/3 cup creamy Italian dressing
8 oz. sour cream
10 oz. grated Monterey jack cheese
Put in 9 x 13 pan
Bake at 325 for 30/40 min
Enjoy

Recipes:
Creamy Chicken:
10 frozen, skinless chicken tenderloins
1 can cream of chicken
1 can cream of mushroom
1 cup sour cream
1/2 cup water
Salt, pepper, paprika
**Spray 9X13 dish with Pam. Line bottom with frozen chicken-sprinkle chicken with salt, pepper and paprika. Combine other ingredients in a bowl and pour on top of the chicken. Bake at 350 degrees for 50 minutes or until chicken is done.
The "gravy" from this is delicious on top of the rice.
Rice: I make my rice like this:
1 cup rice
2.25 cups water
2 chicken bouilion cubes (spelling?)
**Combine in pan and bring to a boil, stir so the buillion cubes dissolve, then cover and steam for 15-20 minutes. Before I put the lid on, I like to add a bay leaf to the top. It adds just a touch of unique flavor.
Green Beans:
Tonight I added some brown sugar and butter to canned green beans, brought to a boil, then simmered for 10-15 minutes. They were SO yummy.

Kid Friendly Recipe!
We went to my friend Valeria's house for a playdate. She totally spoiled us with a yummy lunch of homemade hummus and carrots and these 2 dishes. The kids LOVED the meatballs, especially. I will definitely be making both these dishes. SO GOOD.
Hash Brown Casserole
½ package of hash brown
1 can of cream of chicken
1 ½ cups of mix cheese
Salt, pepper and your favorite seasoning
Coat the Pyrex and mix everything together, leaving a 1/2 cup of cheese to put on top. Bake at 350 for 50-60 minutes.
**Mini Meatballs
¼ cup of plain breadcrumbs
2 eggs (lightly beaten)
1 tbsp milk
1 tbsp ketchup
1 tbsp mustard
¾ mix cheese or parmesan
Salt, pepper and your favorite seasoning
¼ cup olive oil
1 lb ground turkey or chicken
In a bowl, stir together all the ingredients and then add the meat, mix well and shape the meatballs. (50 mini or 30 medium size). Time saving tip-use small measuring spoon or mini-ice cream scooper to form balls.
Bake at 350 for 50 min or until golden brown.
Fun idea: make "meatball lolli-pops" by putting the meatballs on shish-k-bob sticks. Have favorite dipping sauces.

Honey Lime Baked Tilapia
This is a yummy recipe from my SIL Kaylee. Cant wait to try it! Brad and I love tilapia and the boys love asparagus and squash:
Ingredients
1/4 cup Honey
3 tablespoons Lime juice
2 cloves Garlic, minced
1 pound Tilapia fillets
Salt and pepper to taste
1 Butternut squash - peeled, seeded and sliced
1 bunch Fresh asparagus spears, trimmed and chopped
Poultry seasoning
1/2 cup Mozzarella cheese
Preparation
In a large bowl, mix the honey, lime juice, and garlic. Season tilapia with salt and pepper, place in the bowl, and marinate 1 hour in the refrigerator.
Preheat oven to 350 degrees F (175 degrees C). Lightly grease a medium baking dish.
Arrange the squash and asparagus in the baking dish. Place tilapia on top of vegetables, and season with poultry seasoning. Discard remaining marinade.
Bake 20 minutes in the preheated oven, until vegetables are tender and fish is easily flaked. Sprinkle with mozzarella, and continue baking 5 minutes, or until cheese is lightly browned

New Recipe!
Cant wait to try this recipe from Rachel! I love that its a crockpot recipe.
Chicken Rolls and Rice
6-chicken breasts, boneless and skinless
6 slices bacon
1 medium can sliced mushrooms
1 can cream of chicken soup
1-8 oz. sour cream
1-8 oz. cream cheese
salt and pepper to taste
Wrap bacon around chicken breasts rolled up and secure with toothpick. (You may want to cut chicken breasts in half and flatten a bit if they are too large. Also you can use chicken tenderloins.) Sprinkle with salt and pepper. Combine soup, sour cream, and cream cheese in bowl. Mix with electric mixer. Add mushrooms and pour over chicken. Cook on low in crock pot. Serve over rice. It's easy and we love it! Enjoy.
By the way, Charity, we had the taco casserole and it was fabulous! It was probably easier than taco night...less clean up and we just wrapped the casserole up in a tortilla for the boys and they had "burritos." Once again, Brad said he wants this to be a new "regular" meal. Thanks!! I took a pic, just havent sat down and loaded my recent pics.

Dinner was a HIT!
The champage chicken and asparagus was a HIT. The chicken was different than anything I've ever tasted. The gravy was perfect on top of the mashed potatoes. Brad said he wanted this to be a "regular meal." Now I will say that I had quite a time trying to find "dried beef." Even the Kroger workers didnt know where it was-its by the tuna (fyi). I used *light* cream of mushroom and *light* cream cheese and $4 champagne and it was delicious. Thanks Brandy!! Im wondering if I could make this in the crockpot?? I've got a half a bottle of champagne left if anyone wants to try this recipe...or drink it-but remember its $4 champagne-ha!
Im not sure if the boys have ever had asparagus, but they wolfed it down. I used kosher salt-got the recipe off of Amber's blog...thanks!!

Meals for March 22nd Week
Each week, Im going to try one or two of the recipes that I posted from my blog friends. Sheila and Katie-Brad has decided he is "anti" any kind of casserole with bread in or on it. Im trying to talk him into the potpie since its a 'crust' not a bread, so we'll see. But Im definitely going to make it-maybe for some friends having babies. Philly Steak and Cookbook
Philly Cheese Steak Sandwiches
How about Philly cheese steak sandwiches. I just browse the meat section for some priced reduced steak, thin steak is the best, but any will do. Slice it thin with bell peppers and onions, cover with swiss cheese and put it on a bun. Serve with cips. It's really fast and easy.

Take a square pan and line with one pillsbury pie crust (the kind found in a box by the biscuits) - add soup mixture and top with 2nd pie crust. Bake 1 hour at 350
My 2nd recipe just changes the guts -- instead of the chicken mixture, cook 1lb ground meat or turkey, with 1 can rotel (any variety) -- layer pie shell- 1/2 meat mixture - cover with shredded cheese, layer 2nd half of meat, top with shredded cheese & 2nd pie crust -- cook the same!

Chicken Bundles and Champagne Chicken
Chicken Bundles
Take cresent rolls (we use reduced fat) and canned Tyson chicken (next to tuna fish at the grocery). Roll up portioned chicken into the 8 cresent rolls. Place on foil in a baking dish.
Next mix: 2 cups cheddar cheese, cream of chicken, 1/2 stick of butter (we use margarine) and enough milk so that the cosistentcy is like oatmeal or a little thinner.Pour this over the cresent chicken and cover with foil.
Bake at 350 for 45 min, remove foil and bake another 15.

Champagne Chicken
1 can of dried beefPackage of boneless, skinless chicken breasts.
1 can of cream of mushroom soup.
1 pkg of cream of cheese, softened.
1 can of mushrooms,
optional.Champange, I got the cheapest I could get.
Cut dried beef into small pieces. Cover bottom of casserol dish with dried beef but don't use it all as you will use some to put on top of the casserol. Place chicken breasts on top of dried beef. Season with salt and pepper. Mix together cream cheese, cream of mushroom soup and mushrooms. Pour on top of chicken. Pour champange into the dish unitl it is about even with the top of the chicken. Take cresent rolls (we use reduced fat) and canned Tyson chicken (next to tuna fish at the grocery). Roll up portioned chicken into the 8 cresent rolls. Place on foil in a baking dish.
Next mix: 2 cups cheddar cheese, cream of chicken, 1/2 stick of butter (we use margarine) and enough milk so that the cosistentcy is like oatmeal or a little thinner.Pour this over the cresent chicken and cover with foil.
Bake at 350 for 45 min, remove foil and bake another 15.

Champagne Chicken
1 can of dried beefPackage of boneless, skinless chicken breasts.
1 can of cream of mushroom soup.
1 pkg of cream of cheese, softened.
1 can of mushrooms,
optional.Champange, I got the cheapest I could get.
Cut dried beef into small pieces. Cover bottom of casserol dish with dried beef but don't use it all as you will use some to put on top of the casserol. Place chicken breasts on top of dried beef. Season with salt and pepper. Mix together cream cheese, cream of mushroom soup and mushrooms. Pour on top of chicken. Pour champange into the dish unitl it is about even with the top of the chicken. Sprinkle rest of dried beef on top. Cover with foil and cook at 350 for 2 hours. Serve over rice. It is delicious!!!

1 lb hamburger meat
1 pkg taco seasoning
grated cheese
Prepare ground beef and taco seasoning just like you would for making tacos. While still in skillet, mix in the black beans (don't forget to drain) and enchilada sauce. Simmer for a few minutes. In the meantime, cut tortillas into strips using your pizza cutter. In a casserole dish (a small one or two super-small ones), layer tortillas, then the beef mixture, then grated cheddar cheese. Repeat these layers unit your dish is full, ending with cheese. Bake at 300 until cheese on top is melted, about 10 mintues

Easy Rice Soup
Made this tonight when Brad got off. Was easy and yummy on an cold, rainy night...Thanks Sheila for the recipe!
2 *family size* cans of campbell's chicken and rice soup
1 can rotel (use mild if kids are eating it)
*just warm it all up in a big pot. Top with cheese, sour cream and tortilla chips.

Cornbread recipe....Yes, but I have no idea where it is. I'll have to look up in that messy cabinet. I was thinking of making that crescent roll chicken you made for our neighbors.Thats funny about Ada. Kids are so silly...Jackson is my "texture" kid, but Im proud of him bc he almost always *tries* everything. Tucker...oh sweet Tucker...still eats everything and asks for more (and more...)

Week of Feb. 23rd
Monday: Chicken Chili in crock-pot:
Just dump all this in the crock pot, in this order:
Spray bottom on crock pot with Pam.
1/2 a bag frozen chicken tenderloins (about 10)
Sprinkle chicken with chili powder or can add a package of taco season
2 cans chili beans
1 (1 pound) bag of frozen corn
1 can rotel
1 can diced tomatoes
1 can tomato soup
1 can chicken broth
I cooked on high for 4 hours. After 3 hours, the chicken was done, so I just took each tenderloin out, shred it with a fork, then put it back in the pot. Serve with sour cream, shredded cheese, and chips. Freeze half of it for later:)

Di'Gorno pizza and salad

Taco night, homemade guacamole
Other meals:

Just an idea
I probably wont keep up with this, but thought maybe if I posted what I plan for dinner each week, Ill remember what meals I have in the pantry/fridge, if that makes sense?? So many times, I go to the store thinking we have nothing for dinner, but then once I get home and start putting away groceries...lo and behold, I find a "taco dinner" kit, frozen chicken and a box of mac and cheese, etc. Living this far away from wal-mart, its really a waste of time, money and energy to go to the store when its not necessary. Anyway, we'll see...
