Cant wait to try this recipe from Rachel! I love that its a crockpot recipe.
Chicken Rolls and Rice
6-chicken breasts, boneless and skinless
6 slices bacon
1 medium can sliced mushrooms
1 can cream of chicken soup
1-8 oz. sour cream
1-8 oz. cream cheese
salt and pepper to taste
Wrap bacon around chicken breasts rolled up and secure with toothpick. (You may want to cut chicken breasts in half and flatten a bit if they are too large. Also you can use chicken tenderloins.) Sprinkle with salt and pepper. Combine soup, sour cream, and cream cheese in bowl. Mix with electric mixer. Add mushrooms and pour over chicken. Cook on low in crock pot. Serve over rice. It's easy and we love it! Enjoy.
By the way, Charity, we had the taco casserole and it was fabulous! It was probably easier than taco night...less clean up and we just wrapped the casserole up in a tortilla for the boys and they had "burritos." Once again, Brad said he wants this to be a new "regular" meal. Thanks!! I took a pic, just havent sat down and loaded my recent pics.

good! I'm so glad you liked it! Its one that I got out of a pampered chef cookbook, but added and subtracted things... i think I'm going to put it in the April issue of the East Ender (in my recipe column). Glad you liked it!
